A few months ago, girl #3 came back from the grocery with several bags of food. She was cooking lunch she declared. I don’t know about you but I never object to anyone else doing the cooking!
From her plastic grocery sack she pulled out a loaf of bread, bacon, deli meat, cheese, avocados, and baby spinach. How could she go wrong with those ingredients? You can’t!
She began by cooking bacon in the oven, 2 slices per sandwich.
While the bacon was cooking, she sliced the loaf of bread into 3 sandwiches. She bought a multi-grain bread at our local Kroger store. She used a ruler to measure and cut the loaf evenly. I thought it was funny at the time, but have since used the ruler to evenly cut bread myself!
The first thing on the sandwich is cheese, she uses white American cheese, I use Swiss. Next, is deli meat and we both use cracked pepper turkey. Add the two slices of bacon and wrap with aluminum foil leaving the top exposed to heat the sandwich. Bake at 400 degrees for 10 minutes.
Take the sandwich out of the oven and add the baby spinach and sliced avocado and it is ready to eat! We did not add condiments because we didn’t think it needed them.
Today, the HH wanted a fried egg on his sandwich. He also added jalapeño jelly. He said that combination was outstanding!
